1½ cups baby greens mix
1 cup red cabbage, sliced
2 tablespoons chopped cilantro
2 tablespoons chopped parsley
1 teaspoons apple cider vinegar
1 lemon, squeezed
1 large sweet potato, roasted and sliced
3 soft-boiled eggs,
sliced ¼ cup chopped peanuts
Sea salt and pepper, to taste
How to Make it: In a medium bowl, toss greens, red cabbage, cilantro, parsley, apple cider vinegar, and lemon. Season with salt and pepper and set aside for 15 minutes to marinate. Plate the salad greens, sweet potato, and eggs, then top with chopped peanuts and another squeeze of lemon. Serve immediately."
