How To Make Sweet Potato Salad Food Meets Function

Learn how to make a healthy meal with this sweet potato salad recipe. Sweet potatoes are seriously good for you!

"They pack vitamins, minerals, and carbs — exactly the kind of fuel you need before a tough workout. As a plus, this Sweet Potato Salad is easy to prepare — which means you’ll have more time to train. 

Ingredients: 

1½ cups baby greens mix 

1 cup red cabbage, sliced 

2 tablespoons chopped cilantro 

2 tablespoons chopped parsley 

1 teaspoons apple cider vinegar 

1 lemon, squeezed 

1 large sweet potato, roasted and sliced 

3 soft-boiled eggs, 

sliced ¼ cup chopped peanuts 

Sea salt and pepper, to taste 

How to Make it: In a medium bowl, toss greens, red cabbage, cilantro, parsley, apple cider vinegar, and lemon. Season with salt and pepper and set aside for 15 minutes to marinate. Plate the salad greens, sweet potato, and eggs, then top with chopped peanuts and another squeeze of lemon. Serve immediately."
